Erythritol belongs to a class of compounds called sugar alcohols. It can be manufactured but it also occurs naturally in some fruits and veggies so it’s not unfamiliar to the body. Among sugar alcohols, erythritol is the only one that does not affect blood sugar and insulin levels at all therefore it could be an excellent choice for those who want to lose weight, suffer from candida or diabetes and plan to go on a low carb diet. It has proven to be safe for consumption and has the lowest energy value: 0-0.2kcal/g which is basically nothing. (For comparison, xylitol has 2.5kcal/g). It has very much the appearance of table sugar and its sweetness is 70% of table sugar’s. Unlike artificial and intense sweeteners, it also provides bulk so you can replace sugar perfectly with it in almost every food. It is heat resistant and dissolves in cold and warm liquids as well.
